Here is what you will need if you are cooking for one person.
Salad ingredients:
• 1/2 cup arugula leaves
• 15 mint leaves
• 1 cup feta cheese
• 1/2 grapefruit
• 3 oranges
• One red onion (medium)
Dressing ingredients:
• 2 Tbs olive oil
• 1 tsp honey
• One lemon squeezed
• Salt
• Pepper
• 1/2 tsp mustard
How to prepare the salad step by step:
- Let’s prepare the dressing first! Take a small jar and place all the ingredients for the dressing. If you like this combination you can prepare it and store it in the fridge for a few days. When you want to use it simply shake the jar and pour the dressing on top of your salad.
- Prepare your ingredients for the salad. Wash the arugula leaves, wash and peel the grapefruit and oranges, make sure to peel the white part of the grapefruit and orange for a better tasting result. You can cut the onion however you prefer but I recommend julienne. Wash the mint leaves and smash them to unleash their aroma.
- It is time to plate your salad! Choose your favorite salad bowl and place the arugula, mint leaves grapefruit, oranges and red onion and mix them with the dressing.
- Add the feta cheese on top of the salad and enjoy. Bon appetite!
