Easy arugula salad with orange and mint

Are you looking for an easy yet interesting recipe for a quick healthy meal? This salad will come in handy whenever you feel like trying something new without spending 3 hours in the kitchen and making a mess.
Here is what you will need if you are cooking for one person.

Salad ingredients:
• 1/2 cup arugula leaves
• 15 mint leaves
• 1 cup feta cheese
• 1/2 grapefruit
• 3 oranges
• One red onion (medium)

Dressing ingredients:
• 2 Tbs olive oil
• 1 tsp honey
• One lemon squeezed
• Salt
• Pepper
• 1/2 tsp mustard

How to prepare the salad step by step:

  1.  Let’s prepare the dressing first! Take a small jar and place all the ingredients for the dressing. If you like this combination you can prepare it and store it in the fridge for a few days. When you want to use it simply shake the jar and pour the dressing on top of your salad.
  2.  Prepare your ingredients for the salad. Wash the arugula leaves, wash and peel the grapefruit and oranges, make sure to peel the white part of the grapefruit and orange for a better tasting result. You can cut the onion however you prefer but I recommend julienne. Wash the mint leaves and smash them to unleash their aroma.
  3. It is time to plate your salad! Choose your favorite salad bowl and place the arugula, mint leaves grapefruit, oranges and red onion and mix them with the dressing.
  4. Add the feta cheese on top of the salad and enjoy. Bon appetite!
